It is essential to understand that the immediate points before and after your mainland China visit have to be in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). Consequently, your initial itinerary:

Hong Kong - mainland China - Hong Kong

Is not eligible. However, an option with Macau:

Hong Kong - mainland China - Macau

Is definitely eligible.

You will have to take a ferry from Hong Kong to Shekou port in Shenzhen or to Nansha port in Guangzhou. These are eligible entry points when departing from Hong Kong. You will travel to Macau after your stay in mainland China, but you will really have to take a ferry from Shekou to Macau. Unfortunately, there is no ferry from Nansha. I understand that this is quite inconvenient, but currently I am not aware of any other convenient possibility. Also, please, have in mind that you will have to have a ferry ticket (Shekou to Macau) in your hand before your departure from Hong Kong because both Hong Kong and mainland Chinese authorities will want to see it.
