Actually, your stops will be obviously covered by 24 hour visa free transit because it seems that you do not plan to stay in neither of mainland Chinese destinations (Guangzhou and Xiamen) longer than 24 hours. 144 hour visa free transit can be activated only then when your stay exceeds 24 hours. In any case, you are allowed to do this.
1. and 2. You did not mention what will be the point before Guangzhou. If that is a place located in the country different than mainland China or Hong Kong, then you can proceed to Hong Kong by taking a train. You should have in mind that you will have to buy your train ticket even before your departure to Guangzhou, print out the receipt and have it at hand as a proof of your transit intention. Upon landing in Guangzhou, the first thing will be to approach 24/144 hour visa free transit counter where you will apply for a temporary entry permit to be allowed to exit the airport. This application is free of charge and here you will present your flight and train tickets. After a short check, you will be granted a permit and you will head to the immigration to exit the airport. When the time comes, you will have to take exactly that train you have bought your ticket for. After that, you will take a flight to Taipei.
3. and 4. This itinerary is also eligible for 24 or 144 hour visa free transit, based on 24 or 144 hour visa free transit in relation to the length of your stay in Xiamen. Now, you know the procedure after the landing and basically, you will return to Xiamen airport at the time of your flight departure to Seoul.
Also, you are encourage to use correct terminology because this is not 24 or 144 hour transit visa, but 24 or 144 hour visa free transit, so there is no visa of any kind.
