My passport is with me,can my employer cancel my residence visa in china if they dont have my passpo

No, they themselves cannot cancel as it requires the proof of severing labor relation with the signature or cachet of enterprise and yours. And it's you that should submit the cancel application.
Note that if you must apply for the cancellation if you have departed your job, required by law.
