Actually, you can do that, but the condition for something like this is that you arrive in Guangzhou from a third country. For example, if your itinerary looks like this:
Seoul - Guangzhou - Hong Kong - some other country
You can enjoy 144 hour visa free transit valid for entire Guangdong province and you can take a ferry from Guangzhou, Nansha or even from Shekou port in Shenzhen to Hong Kong. In this case Hong Kong acts as a third country and you do not need any kind of visa.
You are informed that you will have to book your ferry in advance through CKS - Chu Kong Passenger company website, you will have to print it out and have in your hands to present it when asked by authorities. Also, you will have to take exactly that boat you have bought your tickets for.
