I am going to HK for a family wedding but I also want to visit my grandma

So we'll be flying to HK and there is a plan for the family to also visit our grandma who lives in Kaiping in Guangdong province. So the first day we arrive in HK we plan to travel to Guangzhou (by train/bus/ferry) to explore and then go to and stay overnight at our grandma's place in Kaiping. After that we might check out Guangzhou for another day but then head back to HK. So we'd be in that region of China for about 2 days. From this itinerary I think we need a tourism visa?

And then if during our HK trip we want to go to Shenzhen, I think we don't need a visa for that portion of the trip as long as our stay is less than 24hrs?

You do need a tourism visa to visit China.

For your second itinerary, since it is not a transit, so it is not eligible for the 24-hour visa-free transit. But it's possible for you to get a 5-day Shenzhen visa on arrival at the port if you hold Canada passport.
