Yes, your itinerary is definitely eligible for 24 hour visa free transit and you do not need any kind of visa. Also, it is perfectly fine to have separate tickets and to fly on unrelated airlines. Everything that matters is that your entire transit time in mainland China is less than 24 hours and in your case it is less than 12 hours.
So, when you arrive in Shanghai, you will just approach 24/144 hour visa free transit counter where you will apply for a temporary entry permit by presenting your flight itinerary. This permit allows you to enter the country and it is granted for free. You will also present your flights and after a short time, you will also cross the immigration and collect your luggage.
Then goes new check-in for your flight to Guangzhou/Australia. The first segment between Shanghai and Guangzhou is considered as a domestic flight, so you will formally exit China in Guangzhou. This is all fine and when checking-in in Hong Kong, you should just tell them that you will fly to Australia by taking 24 hour visa free transit scheme in mainland China. Also, have your flight tickets at hand because you will be almost certainly asked to present them.
