Itinerary that you plan to use:
HCMC - Guangzhou - Hong Kong
Is eligible for 144 hour visa free transit in entire Guangdong province. However, you are informed that there is no a single eligible train option to exit mainland China toward Hong Kong. You will have to use a ferry instead.
Two best exit ports are Nansha port located south from Guangzhou and Shekou port in Shenzhen. In order to be qualified, you will have to book your ferry ticket through CKS - Chu Kong Passenger Transport in advance or better to say, before you leave HCMC. Also, you will have to print it out and have it with you. This is your proof that you are really in transit. Please, have in mind that you will have to take exactly that ferry you have bought your ticket for, so plan carefully.
Also, 144 hour visa free transit is without any visa. There is no visa at all. You will just declare in HCMC that you will travel to Hong Kong by using 144 hour visa free transit in Guangzhou (valid for entire Guangdong province). You will present your tickets and proceed to the gate. Upon your arrival in Guangzhou, you will approach 144 hour visa free transit counter where you will present your tickets and, it is appreciated, an accommodation booking confirmation for the first overnight. After a short time you will be allowed to exit the airport and to explore/enjoy and to perform your business activities because involving in something like this is definitely permitted.
Enjoy your trip.
