Unfortunately, the segment between Hong Kong to Shenzhen is a problem because you cannot cross it without a visa. Simply, the only way how to enjoy any visa free transit option within the Guangdong province (where Shenzhen, Guangzhou and some other cities are located) is to fly into the provice using Shenzhen or Guangzhou airports.
Practically the only theoretical option would be to take a direct ferry from Hong Kong (from China ferry terminal) to Fuyong (Shenzhen airport) and to apply for 5 day Shenzhen visa on arrival. Indian citizens are theoretically eligible, although the the parctice shows that they are recently not granted this visa, so applying for one brings quite a risk. From the other side, when you present your flight ticket from Shenzhen airport to South Korea may help.
Another possible option, but with the change in your itinerary, is to take a flight from Hong Kong to Guangzhou and then to take a train or bus to Shenzhen and to take a flight from Shenzhen to South Korea. In this case, you would be eligible for 24 hour visa free transit option or in other words, you would not need any kind of visa and there would not be obstacles for your transit. If you decide to take this option, you have to perform your entire transit within 24 hours.
