1. Fill out the application form here: cova.mfa.gov.cn Remember to choose the place where you are going to submit the application at first. After, print it out and sign it and then make an appointment to submit it and other requirements. You may read the page carefully to know the other requirements, among which a working permit is the most important for a Z visa. One more thing, it's easier to obtain it in your home country than in a third country.
2. Your wife and kids are eligible for S visas depending on you and you can apply for them together.
3. I suppose your documents were given by Egypt governments or institutes? If so, you should have them authenticated by the Ministry of Foreign Affairs of Egypt and then go to have them legalized by China embassy or China Visa Application Service Center (CVASC). In the case, you may need to go back to Egypt and then it's advised you do all the applications there. 4. If it is required for the visa application, then it should be authenticated.
