I am a 71 yr old Australian born citizen and want to stay after my APEC card expires in Nov 21

I have been in out of China for last 15 plus years on APEC cards. Not working but with my g/f helping in a small bar that is her personal business, not private company. A spouse visa is not an option. Can I establish my own company, buy her business and, as owner and legal rep gain a work visa/ resident permit given my age?
