we land in Shanghai and are planning on site seeing for 3 days before we board a ship for 7 days. Do we need to get a visa or does that fall under the 144hr?

Dawnn, if you enter from a country to Shanghai directly and then board the ship for another country, without other layovers in China, you will be covered by the 144h visa-free transit scheme.
