You don't need any kind of visa because your itinerary is definitely eligible for 24 hour via free transit.
You will print out your flight tickets and take those printouts with you. Also, you will declare at check-in in Istanbul that you will travel to Melbourne via China using 24 hour visa free transit. After a short inspection of your tickets, you will be allowed to board the plane. Here, one very important detail. Assuming that you will travel all the way from Istanbul to Melbourne with China Southern on a single (through) ticket, your luggage will be almost certainly tagged all the way to Melbourne. Anyway, you should definitely ask about this detail during your check-in in Istanbul, just for a case.
Upon arrival in Beijing, you will immediately approach 24 hour visa free transit counter where you will apply for a temporary entry permit to be allowed to board your next flight that will be a domestic one. Basically, you will clear all the formalities in Beijing and will continue your journey toward Guangzhou.
Upon arrival in Guangzhou, you will clear exit formalities and after that, you will just wait for your flight to Melbourne at the boarding gate. That's it.
