Ching, you will travel aboard Eastern Revelations cruise. If I'm right, you will have to obtain a Chinese tourist (L) visa in advance. The reason is simple. The portion of your itinerary:

Hiroshima (Japan) - Shanghai (China) - Ishigaki (Japan)

Is not a transit because the immediate ports of call before and after your Chinese destination (Shanghai) is not in different, but in the same country and that is Japan.

The only good things in the overall unpleasant fact that you need a visa is in the facts that you have enough time to obtain a visa and also in the fact that US citizens are eligible for 10 year multiple entry Chinese tourist (L) visa.

I understand that this is probably not exactly the news you wanted to hear, but at least now you know what you should do to travel with absolute peace of mind.
