About:72-Hour Visa-Free Transit

Got a single entry tourist visa but need multiple entries

Can I use the visa upon entry as follows? (German Citizen with single entry visa)

Do you know if I could travel from Shenzhen to Hong Kong during this time?

12/8 Chicago-Beijing, Beijing-Shenzhen (Use single entry)
12/19 HK-Taipei 12/21 Taipei-Tokyo
12/24 Tokyo-HK, HK-Shenzhen (Train/Bus Visa Upon Entry), Shenzhen-Bangkok
12/28 Bangkok-Shenzhen (Visa Upon Entry)
12/31 Shenzhen-Beijing-Chicago

The last entry, Bangkok-Shenzhen-Beijing-Chicago, requires a visa. 144 hours transit without visa does not apply because of the two consecutive stops in China, and nor does visa on arrival.
