Katia, your entire itinerary is definitely eligible for 144 hour visa free transit. The most important part is:
Bologna - Guangzhou - Hong Kong
Here just few details... Since we both know that there is no direct flight between Bologna and Guangzhou, you will have to fly from Bologna to some other airport for your direct flight to Guangzhou. Please, keep in mind that it has to be a flight that goes directly and without any stop within China from Europe to Guangzhou. For example, a combination of this kind is fine:
Bologna - Rome - Guangzhou
Anyway, a combination:
Bologna - Rome - Shanghai - Guangzhou
Is not eligible for 144 hour visa free transit because of two consecutive stops within mainland China.

The second one is your flight Guangzhou - Hong Kong...
You are perfectly allowed to have separate tickets, one from Bologna to Guangzhou and another from Guangzhou to Hong Kong. This is acceptable. You should only print out your flight tickets and have those printouts with you.
When you arrive in Hong Kong, you can depart from there within a couple of hours or after a week. This is not any more of any interest for a Chinese immigration authorities.
One more detail, you have mentioned that you intend to depart on 12/12, but I assume that your flight arrives in Guangzhou on 13/12. If I'm right, you are perfectly allowed to stay until 19/12.
