Your itinerary:

Hong Kong - Hangzhou - Vietnam

Under the condition that you don't have any additional landings is definitely eligible for 144 hour visa free transit within the entire Shanghai area. I'm emphasizing this phrase "you don't have any additional landings" because Hangzhou has just a few direct flights to Vietnam. These are a flight to HCMC provided by Sichuan Airlines and to Da Nang provided by Vietnam Airlines.

You can confirm this very easy. You can visit Timatic through Air New Zealand website and you will realize exactly this what I have written.

By the way, 72 hour visa free transit in Shanghai area (including Hangzhou) has been replaced by 144 hour visa free transit a couple of years ago. Also, this is not a transit visa, but visa free (without a visa) transit!
