Now, I can conclude that you are definitely eligible for visa free transit in Xiamen and you are perfectly allowed to stop in Xiamen twice for up to 144 hours each time.
Actually, I don't know how long will your layover in Xiamen last, but if you decide that they are less than 24 hours, you will be eligible for 24 hour visa free transit and if you decide that they will be longer than 24 hours for just a minute, you will be eligible for 144 hour visa free transit. My suggestion is always that you make your layovers in China to be longer than 24 hours because 144 hour visa free transit is by far more convenient and you have more rights than with 24 hours visa free transit.
All you have to do is to print out your tickets (e-tickets with 14 digit number) and have those printouts with you. You will declare at check-in in Amsterdam that you will travel to Denpasar via Xiamen using 24 or 144 hour visa free transit (in direct relation to the length of your layover in Xiamen). After a short inspection, you will be allowed to board the plane.
Upon your arrival in Xiamen, you will approach 144 hour visa free transit counter where you will fill out the blue form. It is advisable to have booked at least the first night after your arrival because you will encounter several question regarding your accommodation. Again, after a short inspection, you will get s sticker in your passport and you will be allowed to exit the airport. Between the airport and your accommodation within Xiamen, you should use one of several very affordable buses.
