About:72-Hour Visa-Free Transit

Do I need a visa or can I transit visa free?

I’m travelling the following route and I hold a Hungarian passport. London-Shanghai-Hong Kong-Bali and I’m not sure if I need a full visa or can I use a transit visa?
Landing in Shanghai at 9.10am on 7 Nov, leaving from Shanghai to Hong Kong the next day (8 Nov) at 20.00 arriving to Hong Kong at 22.25. I have an airport hotel for the night and leaving Hong Kong at 10.00am on the 9 November. This means I’m in China for less than 72 hours but I can’t fly direct from Shanghai to Bali so have to transit through Hong Kong.

Also I have a Turkish stamp in my passport, I read somewhere it can be a problem for transit visa on arrival. Is that correct?

You do not need a visa, because your route qualifies for 144 hours transit without visa. A single Turkish stamp should not be a problem, assuming you were there for legitimate purposes. To avoid confusion, please do not use words like "transit visa" or "transit visa on arrival". Always say "transit without visa", which is the terminology used in the rules that airport staff will check.
