The most important detail is that your itinerary is definitely eligible for 24 hour visa free transit and you don't need any kind of visa. To be allowed to exit the airport, you will apply for a temporary entry permit upon your landing in Guangzhou. I assume that you are flying on separate tickets and if I'm right, you will be definitely granted a permit because you will have to collect your luggage and also to perform new check-in for the continuation of your journey to Christchurch. In other words, you will be able to enjoy the hotel without too much of explanation. Please keep in mind to print out your flight tickets and to have them with you, ready to be presented to the relevant authorities.
