Traveling from Amsterdam to Auckland(AKL) New Zealand with a 7hr 45 min stop at Guangzhou, Baiyun In' on an Iranian passport, the 24hr TWON will be ok ?

Yes, you will be definitely OK because your itinerary is perfectly eligible for 24 hour visa free transit and you don't need any kind of visa. Keep in mind to print out your tickets and have them with you. Also, you will declare at check-in in Amsterdam that you will travel to Auckland via Guangzhou using 24 hour visa free transit. Upon arrival in Guangzhou, in case if you are flying on a single (through) ticket, you will remain at the airport because the luggage will be, almost certainly, checked all the way to Auckland.
