Everything is done upon arrival in Beijing. The only thing that should be done is to have the flight tickets in hard copy. This means they will just have to print out their e-tickets and have those printouts with them ready to be presented to the authorities. Also, during the check-in in UAE they will just declare that they will travel to South Korea via Beijing using 24 or 144 hour visa free transit. After a short inspection of their tickets, they will be allowed to board the plane. The question whether they will be eligible for 24 or 144 hour visa free transit depends entirely on the time they will require for their transit from one to the another flight in Beijing. If the time between their scheduled arrival in Beijing and their scheduled departure from Beijing is less than 24 hours, they will be eligible for 24 hour visa free transit and if that time is longer than 24 hours, they will be eligible for 144 hour visa free transit in Beijing area.
So, they will tell to UAE authorities which one of the two visa free options they will use in Beijing. Upon arrival in Beijing, they will look after a visa free transit counter where they will just fill out a blue form and hand it to the Chinese authorities along with the onward flight ticket, i.e. the one for South Korea. Again, after short inspection they will be allowed to exit the airport and to have an overnight in their accommodation in Beijing. This is all absolutely free of any charge. One detail only... It is highly advisable that they bring the confirmation of their accommodation booking in hard copy because there are several question on the form to be answered regarding the accommodation. In reality, this is not overly complicated process, but some parts are maybe a bit hard to understand for an inexperienced user of this Chinese visa free transit options.
