Actually, you can visit Hong Kong using 144 hour visa free transit and then your itinerary will be:
London - Guangzhou - Hong Kong
Please, keep in mind that you will need a train or ferry ticket (in reality an e-confirmation) from Guangzhou to Hong Kong, obtained before your trip to be allowed to do that. This is not a problem, but it has to be done.
Now, to be allowed to return to Guangzhou, you would have to take a flight from Hong Kong to Guangzhou because the only way to enjoy visa free transit scheme when you travel in the opposite direction, i.e. Hong Kong to Guangdong province is by air. In reality only a direct Hong Kong - Guangzhou flight is eligible.
This itinerary will be:
Hong Kong - Guangzhou - Bali
If you want to skip this, you can apply for a single entry Chinese tourist (L) visa that will cover your return journey from Hong Kong to Guangzhou where you can use a high speed train. To reach Hong Kong from Guangzhou, only a conventional train is eligible, departing from Guangzhou East to Hung Hom Hong Kong railway station.
