Do I need to make an appointment to bring a Visa application form to the embassy

You should apply though nearby China Visa Application Service Center, not the embassy. You should first complete the application form on the website of the Service Center, and then make an appointment before you submit them to the service center in person.

...sorry also meant to say that after Hong Kong we stop in Taiwan With our final destination being Japan
