Your all mentioned itineraries are definitely eligible under the condition that you have mentioned your all stops within your itinerary.
So, you can travel UK - Shanghai - Hong Kong (or Vietnam or Philippines) absolutely using 144 hour visa free transit. You have mentioned the possibility to travel by train from Shanghai to Hong Kong. This is perfectly possible, but only by a conventional through train departing from Shanghai railway station to Hong Kong Hung Hom railway station. This ticket should be booked in advance and will be delivered to your accommodation in Shanghai. In the meantime, you will use an e-confirmation that will be sent to your email and you will print it out as a proof that you will really use the train to depart from Shanghai to Hong Kong.
On your way back, you will be eligible in the same way and you will be traveling using 24 or 144 hour visa free transit through Shanghai in relation to the length of your stay in the city.
