Of course it is eligible. Essentially, the portion of your itinerary that interests Chinese immigration authorities is Paris - Shanghai - Amsterdam. Perfectly in case that you have mentioned really all your stops within the entire travel journey.

In reality you don't apply for 144 hours visa free transit. You will arrive at the check-in of Paris airport where you will state that you will travel Paris - Shanghai - Amsterdam using 144 hour visa free transit. You will present your tickets in hard copy as a proof and you will be allowed to board the plane.

After you arrive in Shanghai, you will approach 144 hour counter where you will fill out the blue form and hand your tickets, your passport and the mentioned form to the immigration official. After the short examination, you will get a sticker in your passport and be allowed to leave the airport. That's it.
