Uk-Beijing- Hong Kong-Thailand then Beijing

Hi there, if we’re flying from the uk to Beijing arrive 27th 6.55am- flying out of Beijing 30th at 12:55 to Hong Kong, from Hong Kong to Thailand, a week in a Thailand then to Xi’an for two nights then on to Beijing overnight to fly back to the UK would this be possible to do using transit visas rather than An actual visa or can you not apply more than once in a trip? Thanks in advance.
