David, your itinerary South Korea - Shenzhen - Hong Kong, if you stay at least 25 hours in Shenzhen, allows you to be eligible for 144 hours visa free transit in the entire province of Guangdong.
So, the first part is resolved and you will arrive by plane to Shenzhen from South Korea. Here you have to keep in mind that you are not allowed to have any additional landing within mainland China!

This ferry is actually the only available option to travel between Shenzhen to Hong Kong that could be bookable online and to be eligible for 144 hours visa free transit. Keep in mind that you will have to travel on that ferry that you will book your ticket for. Also, you will print out e-confirmation before your departure from South Korea and have it in your hand at check-in.
