How far in advance to apply for Visa

We are traveling to China via Hong Kong on 23 September. We are in Europe from 17 to 31 July and wont be able to apply for a visa until we return to the UK on1 August. How far in advance can we complete the on line form and is it difficult to get an appointment at the Edinburgh office? Should we apply now or will we have plenty of time in August?
