About:240-Hour Visa-Free Transit

Cruise and Stay

I travel to Shanghai via Dubai with Emirates, than stop in Shanghai for 3 night, take a cruise around Japan for 8 nights, return back to Shanghai and fly that day to Beijing stopping in Beijing for 3 night than back to UK via Dubai again.

Will I need to get a full visa from the Embassy? or use the 144 hours and will I need to do this twice (Shanghai and again in Beijing)

You need a tourist (L) visa for your second entry to China. 144 hours does not apply because you are transiting in Shanghai and Beijing which limits you to 24 hours.
