Is a visa required/ Do I need a visa?

We are travelling from Hong Kong to shanghai staying for 3 days and then heading back to sydney through Hong Kong.

Visa will be needed since your entry and exit country are the same. You need to continue to a third country before you can fly through the Hong Kong airport again.
