About:240-Hour Visa-Free Transit

I'm pretty sure the answer is NO to this one, but here goes

What about if I fly in to Shanghai from Estonia (via Turkey), spend 6 days there and take the TRAIN to Hong Kong?

You are eligible if you can secure a ticket on the overnight train Z99/Z100 (aka the Shanghai-Kowloon direct train). Traveling to HK on high-speed rail still requires a visa.

You would also need that train ticket in your hand when you check in at Estonia.
