Hello, I am traveling from Montreal to Shanghai (staying 96h) and then going to Syendy and then coming back to Shanghai for 48h before going back to Montreal. Does this qualify?

Or am I able to apply for a first 144h twpv upon my first 4 day entry in Shanghai, and then apply for another 144h twov when I come back from Syndey?

Yes you can use it twice. Once to Australia and once from Australia back home. Just make sure only one landing in China in each direction
