I arrive in Guangzhou on Monday at 6pm, my next flight to Delhi is on Thursday at 7pm.

Do I qualify for the 72 hour visa free transit?

Yes, there will be no problem since the 72 hours are calculated from 00:00 the following day of the entry date.
