Is this information listed on any official Chinese governmental website? I cannot see anywhere where it is written that a transit where you do not leave the airport (such as the one mentioned here in Paris) counts as a "third country". I do not doubt that your information is correct, but I would like a print-out of a webpage which I can take when I check-in - in the past I have experienced check-in staff who are not familiar with the details of this visa-exemption system.

Check-in agents will use an IATA database called Timatic. You can find it on some airline websites and print out from there if you wish.
