Assume you have a layover flight with a stop in Shanghai and you go to Sydney. You want to go in to the city with a 72 h free pass at what time you need to be back before the plane leaves? Do you have to check-in again?

Depends on the airline if they can check you through all the way. Be aware if your stop is under 24 hours they will not give you more than the 24 hour direct transit. Depending on how short it is you may be refused the ability to leave the airport if not an an overnight w/ hotel.
