What train station

Hi. Was planning to book online train tickets from Guangzhou to Shanghai for our trip to China this month. I was just wondering if it will be indicated in the voucher or confirmation as to what train station we should claim our ticket.

Yes, the departure station is fixed, you can see it before you make a booking. For example, high speed rides depart from Guangzhou South Station. Thus you can choose the one needed. If you booked a ticket online in advance, you can collect the paper ticket out at any station in mainland, do not have to be your departure station.
