About:240-Hour Visa-Free Transit

I plan to enter Shanghai from the UK and stay for 4 nights to use the 144 tourist visa

then fly to Tokyo and Seoul then back to Shanghai and stay 1 night in Shanghai again before I fly back to uk, would I qualify for the 144hr visa again even though I've entered once before (as still stayed less than 144hrs) Many thanks

Yes. There aren't any restrictions on how many times you can use visa-free transit within a period of time.
