Is there a plan of Hong hum station

How easy is it to find correct train at hong hum station travelling to Guangzhou. Can I buy a ticket in advance

Yes, it is not hard to find your direction, you can find signs for the waiting area, ticket check etc. You can buy a ticket online in advance or at the station days before as well if you will stay in HK for a few days before this trip.
