Why do we celebrate the Moon Festival on a different day every year?

Because the Chinese People are using a lunar calendar just like we (the Jewish people) do, so you can ask the same question about Succot which is the kind of a parallel holiday...

The Chinese lunar calendar is different every year, so the date is also different.
