A simple calculation will tell you that your layover time is only 52 hours and definitely under the 72-hour limit.

Then another simple calculation tells you that you will be in China for 52+24 = 76 hours which is more than 72 hours. So you either need a visa, or you need to change your itinerary.

Is that how the rule works? I thought for Beijing the day starts at 12:01 am the day after your arrival. So, I was expecting that this would still be acceptable. Which one is it?

No. At Beijing (PEK), Guilin (KWL), Harbin (HRB), Kunming (KMG) and Shenyang (SHE) the maximum transit time is 72 hours.
