but because of lack of cooperation on their part to help me secure an exit clearance from my government, I am now thinking of not going there once I arrive in China. Another school would like to hire me instead. Can I use this visa I have? Or if my employer will cancel my work permit in China will it affect the visa I am holding once I enter China?

No, you cannot use this one. You need to cancel your work permit first and then the new school needs to get a new one for you. After, you can get a new work Z type to work for the new school.
