About:72-Hour Visa-Free Transit

Could I get two visa free transits 1 week apart?

Is it possible to go from Chicago to Beijing, get 72 hour visa free, then take a separate round trip flight Beijing to Seoul for one week, after returning get another 72 hour visa free, then back to Chicago.

Yes of course. CHI-PEK-SEL-PEK-CHI is a valid itinerary, and separate tickets is fine too.
