My Dad and I are interested in getting Street Food for dinner.?

Which road do you recommend going that will give us more diverse Shanghai food? South Yunnan Lu or Dingxi Lu or another street?

There are many snack streets in Shanghai, like Wujiang Road, South Yunnan Road, Old City God Temple Snack Street and Xianxia Road. Each of them provide you various dining choices. You just need to choose one near your hotel.
