I'm traveling from Haneda Tokyo to Seoul Gimpo, layover is in Beijing Capital Airport is 1hr 40mins.

Both on Air China will this leave me enough time? Also do I go through immigration customs? Thanks

Yes, your transfer time is enough. Don't worry. It is an international to international transfer both in T3 of PEK. You don't need to go through the immigration customs. The correct transfer procedures are the following:
Flight Arrival - Transfer Procedure - Stamped on the Boarding Pass - Security Check - Custom Inspection - Waiting & Boarding
