hi, we will be traveling to hk next month for 5 days.

Question

I liked the AE travel express card but it only has unlimited MTR for 3 days. does this mean i have to buy another octopus card for my remaining 2 days? thanks.

No, you don't need to purchase another card. After purchasing the AE Travel Pass, you can recharge some money. Then the card can only used as the Standard Octopus Card.
