About:China Visa Application Procedure and Fee

Do I need a visa to enter Beijing for 3 days then flying in to Hong Kong..for 7 days

Susan, if you fly from a foreign country to Beijing, stay for 3 days, and then fly onward to HK, you will qualify for the 72-hour free transit in Beijing, so the entry permit is not required. And you vcan enjoy the free stay in HK as well if you are an Australian.
