I'm landing at HKIA in the morning and will leave on a ship at night (11 hours later).What is the optimal transportation that brings me from the airpoirt to downtown and involves several/unlimited bus or rail rides for a single day?

No, there is only an Airport Travel Pass for one day unlimited MTR rides. According to your situation, you are advised purchase the Same Day Return Ticket. This card contains one Return journey of Airport Express between Airport and the station specified. Valid on the day of issue. Then you can prepare some cash to take the public buses and MTRs.
