Mexican going to Bangkok with a stop in Shanghai for 5 hours (change airlines: Aeromexico to Shanghai Airlines) then stop in Guiling for 48 hours, then go to Bangkok. Return: Bangkok to Shanghai, stay there for 60 hours, then go to Mexico. Do I need a visa?

For your flight Mexico - Shanghai - Guilin - Bangkok you need a visa as your transit time is over 24h.
You can´t use the 72/144h twov as it´s not allowed to have stops in 2 chinese cities.
Just the 24h transit allows 2 or more stops but as your transit time is 53h you don´t qualify for it.

For your return flight - is Shanghai your only stop in China?
If so, you can use the 144h twov and don´t need need a visa.
