I am in China and need to change my visa to working Z type

I’m afraid you cannot change it in HK. You can only apply for a work Z type in HK, but if you don’t have HK residence permit, it may not be easy.
The case is the same if you apply for it in Bangkok.
You can try to change it at the exit and entry administration of the local PSB in Shanghai.
