According to your schedule, you only have three days for sightseeing in HK. Since you have child, I would suggest you visiting Disneyland or Ocean Park for one day. Have a city trip to visit Victoria Harbour, Star Ferry, Victoria Peak, Madame Tussauds for another day. If you like shopping, you can go to Causeway Bay, Central, Tsim Sha Tsui. There are many hotels in HK, you are advised to choose one near the subway station so that you can travel around easily.
